I already had Grommunio running in a Docker container, that was at the very beginning when I was looking into Grommunio as a whole. At the same time, I was also experimenting with the VM. As a result, Docker containers are generally more complex to administer if individual adjustments have to be made in the system, which is basically unavoidable with Grommunio. I also consider VMs to be more powerful, as long as the corresponding resources are allocated. These were the main reasons why I stayed with the VM.
I think I speak for many users, which is probably why there is relatively little to be found about it.
