Mac mail (EWS) issues with UTF in subject line of emails

Hi all,
Today I spotted an issue with "=utf-8?Q?" appearing in the subject line of some emails, but ONLY when read on Mac mail using EWS connection. I tested this on four other systems connected to the same mailbox, but only Mac mail connected by EWS has this problem. Mac mail on IMAP, Outlook for Mac, Outlook for Windows and Webmail do not sho the UTF string when viewing the same inbox and emails.

Any idea why only the Mac Mail EWS connection would have this problem?
Any additional debug info I could provide that would help?**

Screenshots of five different tests with same email below. Only the first one (Mac via EWS) has the problem. Times are different in some screenshots because different clients/machines treated my timezone (UTC+8) differently. Definitely the same emails and inbox every time in every screenshot.

I can confirm same issue on Mac Mail (running Sonoma 14.2.1 - Mac Mail Version 16.0 (3774.300.61.1.2)) see below:-

Hadn't mentioned this as an issue as not being able to delete or move emails properly in Mac Mail are stopping me using it (Mac Mail) until the dev's can identify and resolve the issue. I have seen a similar effect in Gr Web from time to time with some emails, but can live with this as does not affect being able to read/reply to any affected emails.

We have not seen such conversion as of yet. Would you be able to export such an email (through web, for instance) and share it?

@mwilliams I have checked my Gr Web inbox and it appears that I have deleted all such emails (there are generally sales/marketing type emails) as not normally needed to be kept. The message shown above was from Mac Mail, in the inbox listing, the mail itself displays correctly in the reading pane. Also displays correctly in GR Web, and Outlook in both Inbox and reading panes.

If you would like a copy of the email please advise as I saw @WalterH advised that their is already a ticket open for this issue.

Maybe I can help here as I experienced the exact same issue right now with the macOS mail client @mwilliams and I don't have access to the ticket.

It only affects mails with umlauts in any header field.

So some example is this line with my full name in it (two umlauts):
To: "=?iso-8859-1?B?Q2hyaXN0aWFuIFP832VuZ3V0aCAtIHN3ZWV0Z29vZC5kZQ==?=" <REDACTED@REDACTED>

Another example is this subject line which also has two umlauts in it:
Subject: =?utf-8?B?R1ZQLVF1YWxpdMOkdHNzdGFuZGFyZHMga8O2bm5lbiBhYiBzb2ZvcnQgdm9uIGFsbGVuIE1pdGdsaWVkZXJuIGdlemVpY2huZXQgd2VyZGVu?=

Cannot confirm that it has been repaired. Do I have to recreate the mac mail email profile for it to work? Just restarting Mail on the mac and checking for new mails does not work.

I'm on the newest supported version now and new mails with umlauts in the "from" header field are still encoded like this:
